Layer from the skin out: a snug base layer moves sweat away from your body, a mid layer traps heat, and your riding jacket blocks the wind. A balaclava or neck warmer seals the gap between helmet and collar, which is where most cold air sneaks in. Pair them with warmer gloves for the coldest stretches.
